Pleurotus ostreatus var. columbinus
A versatile workhorse mushroom with velvety caps and tender stems. Great in stir-fry, pasta, curry, or simply pan-fried. A natural meat replacement that sells fast at farmers markets and restaurants alike.
Hericium erinaceus
A cloud-like mushroom with a mild, slightly sweet flavor often compared to crab or lobster. A chef favorite for pastas, sautés, and sandwiches. Also valued for its potential cognitive and nerve-health benefits.
Pleurotus ostreatus
A striking oyster strain with deep chocolate-brown caps and a dense, meaty bite. Grows in large overlapping clusters whose velvety caps darken as they mature. Its robust, earthy flavor shines under heat — sautéed, roasted, or simmered into soups and stir-fries without losing its texture.
Pleurotus ostreatus × eryngii
Dense and meaty with a slightly sweet, earthy depth. Dark gray-to-black caps sit atop thick, substantial stems that hold their bite under high heat — ideal for grilling, roasting, or searing. Its mellow flavor takes well to garlic, ginger, and soy, making it a natural fit for stir-fries, ramen, and other Asian-inspired dishes.

We grow what's asked for and forecasted. Our indoor environment provides year-round production with some seasonal variability based on each variety's temperature ideals. We harvest fresh for each order.
